Meat: Beef & Veal (milk fed & rosé) / Pork / Chicken / Lamb / Sausages & Bacon (own produce) / Offal & Variety meats

Other Poultry: Squab / Pigeon / Quail / Guinea Fowl (Whole, Supremes) / Turkey (Whole, Breast , Crown) / Ostrich / Duck (Whole Magret, Legs, Confit)

Game: Rabbit (Whole, Jointed, Loins) / Venison (Loin, Haunch, Fillet, Shoulder) / Wild Boar / Kangaroo Fillet.

 

Smoked products:

Meat: Baby-back ribs, pulled pork, pork joints, chicken wings, chicken breasts, duck breasts, beef briskets, short-ribs.

Fish: Salmon (sliced or not), heart of salmon loin, sardines, tuna, swordfish, cod, mackerel, Cantabrian anchovies.

The provisioning team at evolution has always sourced new items that i have challenged them with, be it fresh wasabi grown in England, sustainable caviar from France, or salt-marsh lamb from wales. Colin, a 3rd generation scottish butcher has it all, producing great additive free sausages & bacon right here in Barcelona as well as hot smoking ribs, topside, salmon, mackerel ,and anything else that you might request.
