One of the best types of meat you can find, he shares, is Galician Blond beef . “ We are able to supply on-board chefs with all the favourite cuts; ribeye, sirloin and fillet ,” he assures.


So, what’s all the fuss about? Galician Blond is a breed of cow from the region of Galicia in Northern Spain . As anyone who has visited Galicia will know, the mild climate and generous rainfall of this locality is ideal for maintaining the rolling fields on which the Galician Blond cattle graze all year round. Their meat is popularly being touted as the best steak in the trendiest restaurants in gastronomic hotspots from London to New York, although some might be surprised to discover their secret. 

A rare steak

Beef cows generally have quite short lives and are slaughtered for meat when they are between two and three years old. This became good practice during the BSE “mad cow disease” epidemic that led to significant tightening of recommendations and legislation in the international meat industry. However the Galician Blond cattle are more than eight years old and up to seventeen years old when they are slaughtered. As the cows age, their bodies naturally start to develop layers of fat, which according to intrepid beef connoisseurs gives a highly desired marbling texture and flavour .


Chefs who are familiar with Galician Blond beef generally recommend a different cooking technique . Beef is usually cooked quickly at a very high temperature over an open flame, which results in the popular combination of a crispy exterior and rare interior. Rubia Gallega meat favours a slower cooking time on a flat grill , which ensures maximum flavour and tenderness .
