Arriving to Mallorca : Mallorcan Easter treats

Easter is here, and with it the favourite sweets of all Mallorquins. If you are mooring in Mallorca during these dates, you can see that the bakeries are filled with “crespells, panades and robiols”.



Although these Mallorcan delicacies can be found throughout the year, they are the most popular during Easter, an occasion in which many families gather to prepare and bake them.


The origin of these sweets is found in the Christian calendar, but today we can find a variety of more modern recipes that move away from religion and become more of a tradition that can be enjoyed by anyone.


Panades:

Panades are a kind of empanada made in the form of a basket using dough made of flour and lard. Normally they are filled with meat, peas, and a little touch of sobrasada . You can also find some fish-made ones during Lent. Nowadays you can find them filled with almost anything, it’s even possible to get some vegan ones in specialised bakeries, so there is no excuse to not give them a try.


Crespells:

Crespells are a kind of biscuit typical of Mallorcan Easter. They are currently made from flour, lard, olive oil, egg yolk, sugar, and lemon. Although one of its traditional forms is a star, it’s possible to find it in varied shapes, hearts, diamonds and almost anything.


As a main feature, these pastries are made without any leavening and without prior rest . The dough is baked once prepared and the result is a slightly flaky biscuit, with a lot of flavours and actually, very easy to prepare.


Robiols:

The Robiol or rubiol is a typical paste of Mallorca and Menorca, of medieval origin, consisting of a piece of fine flour paste, kneaded with oil, lard and egg, folded in a semi-circular form and with a sweet or salty filling.


In Mallorca, robiols are sweet and can be stuffed with cottage cheese, custard, jam, or other sweets. However, robiols in Menorca are salty and typically eaten for major festivals. These can be made of fish, meat, or spinach, which usually also have raisins and pine nuts.
